We also use EBB and love it.  Their MAC client is solid and they are very up-to-date about blocking all VM machines (Mac and Windows) so that students can't run EBB in one VM and have their notes up in another VM (including locking down modified splash screens).

We also use EBB (Electronic Bluebook - Computest),  at the University of Michigan Law School and love it. Gary is correct it has an excellent Mac client which we have used for a few years.

We bypass this problem by using Exam4, which of course has always had a native mac client. :)  May not be an option of course, but it was for us.
